Ceylon cinnamon, also known as true cinnamon is only grown in Sri Lanka (formerly Ceylon). It contains the aromatic compound cinnamaldehyde, which is responsible for its warm, sweet flavour and delicate fragrance. Unlike cassia varieties, Ceylon cinnamon contains only trace amounts of coumarin, making it a preferred choice for regular culinary use. The essential oils retained in the thin, layered quills also contain other beneficial compounds like eugenol and linalool, contributing to its complex aroma profile. Quality is judged by the tightness and thinness of the quills, the lightness of colour, and the intensity of its sweet, floral fragrance. Proper storage in an airtight container away from light, heat, and moisture is essential to preserve its delicate volatile oils and prevent loss of aroma.

The colour of cinnamon is a uniform light brown to pale tan. A cinnamon quill is made of many layers of paper-thin bark, rolled like a small cigar. Cinnamon quills are ground to an aromatic powder, that is a similar colour to the quills, and has a very fine dusty texture. Ground cinnamon quills are the best grade of cinnamon to use in delicately flavoured dishes where an overly dominant cinnamon taste is not required. The fragrance is sweet, perfumed, warm and pleasantly woody.
