Cinnamon leaf harvesting is done by cutting the mature, healthy leaves from the Ceylon cinnamon tree, then carefully gathering and drying them. The leaves are dried in the shade or gentle sunlight until they become brittle and turn a deep green to light brown. The dried cinnamon leaves are irregular in shape and size, with visible veins running through them. Their colour varies from olive green to a muted brownish-green. Cinnamon leaves may be used whole, crushed, or lightly chopped. To produce pure cinnamon essential oil, the dried leaves are steam‑distilled, during which the volatile aromatic compounds — primarily eugenol — are released and condensed into a pale yellow to golden oil with a warm, spicy, clove‑like aroma.
